Holiday Entertaining – Toast the New Year with a Cava Royal

Cava is the new Prosecco. At least according to me that is.
Those of us who enjoy the occasional glass of sparkling wine couldn’t help but be swept up in the recent popularity of the Italian bubbly with the fizzy name. Well, I’m here to tell you that its Spanish cousin—Cava—is yet another delicious alternative to Champagne.
Cava is the Spanish word for cave or cellar. Caves were used to age the wine during early production, which dates back to the mid-1800s. Today, Cava is produced in eight winemaking regions in Spain.
One of my cherished New Year’s Eve party traditions is to serve a Kir Royal—a classic French cocktail made with Champagne and crème de cassis (blackcurrant liqueur). I’ve substituted Prosecco on many occasions and when I discovered Cava, I couldn’t help but put it to the Royal test.
The result is a Cava Royal—a distinctive way to toast the New Year. In a festive twist, I use pomegranate liqueur to create a ruby red blush and a touch of tartness.

Cava Royal
1 – 2 ounces of PAMA Pomegranate Liqueur
Cava, chilled (about 6 ounces per serving)
Pomegranate seeds
Pour liqueur into a Champagne flute. Top off with Cava and garnish with pomegranate seeds. Serve.
