Strawberries in Balsamic Vinegar and Black Pepper {with Coconut Whipped Cream}

During the season, I tend to like my fruits with as little embellishment as possible. When I say embellishment, I mean sugar. They are so fresh and sparklingly pretty that its a pleasure enough to enjoy them unadorned. But of course, it helps that I absolutely hate to turn on my oven in the summer! So it all works out.

I do, however, am not averse to, at times, respecting the cravings and making treats. This is one of those treats!

Marinating strawberries in balsamic vinegar is a classic. The vinegar brings out the natural sweetness of the strawberries. Adding a little bit of natural sugar make this even more so. The black pepper adds a savory dimension that makes it interesting (quick note on why I love “savory” ingredients in desserts – keeps it from crossing the “cloying” border in my book).

Top this with some as lightly sweetened coconut whipped cream and you’re on your way to heaven….

    I have tried a similar recipe (without coconut cream) and it is surprisingly wonderful! Be brave and try it!
